We recently had the pleasure of listening to a talk on Medicinal Mushrooms at the Kinesiology Association conference by an expert who has written many books on the benefits of eating mushrooms daily. So we decided that we should take his advice and try out some new recipes that brought together Mushrooms and our new CBD Honey.
1 x Whole Chicken
2 x Lemons unwaxed
100g x Dried mixed oriental mushrooms
400g x Fresh whole chestnut mushrooms
2 tbls of Soy Sauce
1 tbls of Fish Sauce
2 tbls of Coconut oil (vegetable oil is also find to use)
3 cloves of garlic, 1 finely chopped/minced 2 halved
3 cm square of fresh ginger chopped/grated or minced
1 tbls of CBD Honey
Sesame oil for serving
Heat the oven to gas mark 190 degrees. Rehydrate the dried mushrooms with boiling water enough to cover them with and extra 5 centimetres over the top of the mushrooms. This usually take around 10 mins to complete.
Place the chicken in an over proof dish, halve both lemons and put two halves in the cavity of the chicken and the other 2 halves in the dish. Add the fresh mushrooms and 2 halved garlic cloves to the dish alongside the chicken.
Take the rehydrated mushrooms and add the tablespoon of CBD Honey, coconut oil, minced garlic, ginger, Soy Sauce and Fish Sauce, mix it all together as this will be your marinade for the Chicken.
Pour all of this marinade over the chicken and cover with foil. Cook for the length of time outlined on the chicken packaging, usually around 1hr45, however this will change depending on the weight. Uncover the chicken 30 mins before the end of the cooking time to allow the chicken skin to crisp up.
Make sure you regularly baste the children with the marinade at 20 min intervals throughout the cooking cycle.
We served ours with egg noodles with onions, chilli and broccoli with sesame seeds and green beans with soy sauce and sesame oil.
